As Passover approaches, I would like to wish you all a very happy holiday. I would also like to share my late grandmother’s Charoset recipe- one of the best around.
My grandmother was born in Egypt and she considered Passover the most important holiday. Every year she would clean her kitchen thoroughly to get rid of all Chametz before the holiday. Then she would cook all kinds of delicious treats and have them sent to all members of her large family.
I grew up in a kibbutz, which is a very secular place and wasn’t that familiar with the holiday tradition. I remember myself waiting impatiently every year for my grandmother’s special Passover package to arrive. Inside there was the most delicious Charoset I have ever tasted. It was made of dates, raisins and walnuts with a pinch of cardamom and cinnamon. Then there were also coconut cookies, coconut jam, nuts, and a Passover Haggadah with warm greetings from my grandmother.
My grandmother’s Charoset (Makes about 6 cups)
1 pound raisins
1 pound pitted dates
about 2 cups water
1/4 cup sugar
1/4 cup Sweet red wine
2 cup fine chopped walnuts
Combine raisins and dates in a bowl.
Add 2 cups water (or enough to cover).
Let stand overnight.
Place mixture in food processor or blender.
Add sugar and process until mixture is well chopped.
Transfer to a heavy saucepan add the red wine and simmer 30 min or until fruits are cooked and water is absorbed (careful – stir constantly or you’ll get a volcano in your kitchen).
Optional: Add 1 tsp cardamom, 0.5 tsp cinnamon and a pinch of cloves.
Makes about 6 cups.
